    Rancho Gordo® Heirloom Beans

Rancho Gordo® heirloom beans are a staple in the kitchens of celebrated chefs like Thomas Keller (The French Laundry) and Alice Waters (Chez Panisse) - two pioneers of American fine dining who value quality, freshness, and integrity.

Grown on small farms using traditional methods, these beans are prized for their rich texture, nuanced flavor, and exceptional consistency. Each variety brings something unique to the table, transforming simple meals into something memorable. Once you’ve cooked with heirlooms, you’ll understand why the best chefs insist on them.

    Scarlet Runner
Bold and beautiful, Scarlet Runner beans are large, meaty legumes with deep maroon and black markings. Their firm texture holds up in hearty stews or composed salads, and with longer cooking, they become creamy and rich. Prized for their earthy flavor and dramatic appearance, they’re as much a visual statement as they are a pantry essential.

    Royal Corona
A showstopper bean, Royal Corona is enormous, creamy, and utterly satisfying. Larger than typical Italian butter beans, these heirlooms maintain their shape beautifully and soak up flavor like a sponge. They’re exceptional in brothy soups, herbed salads, or simply dressed with olive oil and salt.

    Flageolet
A French classic with a pale green hue, Flageolet beans offer a delicate, mild flavor and a creamy yet intact texture. Traditionally paired with lamb, they also shine in vegetarian dishes, especially with roasted tomatoes or fresh herbs. Elegant and understated, they elevate simple meals with ease.

    Midnight Black
Midnight Black beans are sleek, thin-skinned, and deeply flavorful—far beyond the average black bean. Their creamy interiors and rich, clean taste make them ideal for tacos, grain bowls, or soups. A reliable workhorse with gourmet credibility.

    Rio Zape
Often compared to pintos but far more complex, Rio Zape beans are velvety, with notes of cocoa, coffee, and spice. They shine in refried preparations, chili, or simply stewed with onions and garlic. A true heirloom treasure with deep roots in the American Southwest.
